I don't often post things that don't have to do with the kiddos....but I wanted to post something about all the baking I did yesterday. I tried out 3 new recipes from pinterest yesterday. For all my Pinterest friends, these are all worth repinning! Matt has a board meeting this morning that I wanted to make some goodies for. When we lived in NM, I would always make breakfast breads for the morning meetings that were in ABQ. One of the benefits of this new job is that all of the meetings are in town... guess I'll get to try out more recipes.

First. Bacon and Cheddar Scones. The recipe actually called for green onions too, but with my husband being averse to any and all types of onions I chose to omit them. The scones weren't as labor intensive as I expected them to be. Very delicious and a nice change from the traditional sweetness of breakfast breads |

Second. Low-Fat Blueberry Oat Muffins. These are great and certainly don't taste low-fat. They have applesauce and brown sugar and as much oats as flour and only 2 tablespoons of oil. The recipe called for wholewheat flour, but I didn't have any and just used white. The other thing I didn't have was my regular 12 count muffin pan....the joys of moving. I looked and looked everywhere and couldn't find it. Luckily Matt had bought me a jumbo muffin pan for Christmas, so I made jumbo muffins. These were a big hit at my house and I wouldn't miss the full fat variety! |

Finally, Third, Double Chocolate Muffin. On the posting it said something about a copy cat of a muffin from whole foods. I don't often frequent whole foods so I'm not sure about that. These are excellent and very light. The recipe calls to make them in the blender. you grind up oats, add egg whites greek yogurt and applesauce. It called for artificial sweetener, but I just used sugar. They were excellent, not too sweet but could definitely double as a dessert. YUMMY
Well that was our baking day yesterday. Hopefully the board members will enjoy them today. Luckily I made enough that I saved some of each at our house. In fact, I think breakfast is calling. |
